Coconut Yellow Rice - Indian Food
- Rice - 500 gms
- Coconut - 115 gms
- Onions - 50 gms
- Turmeric - a pinch
- Ghee - 50 gms
- Garam Masala - 2 gms
- Stock / Water - 900 ml
- Salt - 10 gms
Method -
- Clean, wash & soak rice for half an hour.
- Scrape & grind coconut; soak in part of stock
- Heat ghee, fry sliced onions till brown & crisp. Remove
- Add spice, drained rice,turmeric & fry
- Add hot stock,coconut milk & salt.
- Cook till rice is tender.
- Remove excess moisture in the oven or with live coal on top.
- Serve hot garnished with fried onion.
